Grill Memoirs: Beef Brisket, Made Easy.

Happy Monday. Last week we talked about the best way to preserve lean muscle mass on those days you’re not training. This week I thought I’d bring back one of reader’s favorites – Grill Memoirs. This is so good I had to share it – so thanks and credit goes to Creme De La Crumb.

Summer’s starting to come to a close, and this past weekend I was craving something that suited these transitional season temperatures. I’ve always been a fan of pulled beef brisket (well, pulled anything, really) – it’s just one of those things that feels like home when you’re away from home – or a nice welcome back type food for when you return.

While it’s good to know how to make quick, nutrient packed food for while you’re on the go, there’s some foods you just want to slow down and enjoy in life. This is one you can have on a nice warm day in the backyard with friends, family, a few beers and the smell of your favourite barcbecue cheat treats.

I chose to share this version of brisket in particular because of the ease in making it, and the unbelievably tasty end result. If you’ve bought any of my books, you know I’m all about stripping away the inessential and keeping things efficient – qualities I’ve found have worked throughout life.

Plus, whether you’re king of the grill and primary bread winner, bitterly divorced, or single, most guys (and some girls!) like things simple and straight-forward (Tiffany at Creme De La Creme is clearly one of those women – props to you, Tiffany).

This is also a great choice for a cheat meal because it’ll give you a big protein hit, is lean and low in saturated fats (with the right cut of brisket), and satisfies your taste buds, all in one.

I like to pair mine with my own version of “Texas Toast”, using white boule bread, spreading some real full fat butter (none of this margerine bull crap) over a few slices, dusting them with garlic powder granules, and then grilling them with a slice or two of cheddar cheese until bubbly and melted (who says athletic, mechanical minded people can’t be creative?).

Yes, white bread is slightly higher on the GL scale but this is a cheat meal – it won’t hurt you if it’s on a sunny Saturday in the backyard.

With all briskets, this’ll take time to get the meat tender – but the prep time is probably less than the time it takes you to warm up in the gym.

Makes: Leftovers your kids will fight you for.

Prep Time: Roughly 15 minutes.

Cook Time: About 10 hours.

Total Time: Around 10 and 1/4 hours.

Items Needed: A slow cooker. A Large saucepan. A small bowl. A whisk. Patience.

Ingredients:

For The Beef Brisket

  • 2.25 kg / 5 lbs. Beef Brisket
  • 1/2 tsp Black Pepper
  • 2 tsp Chili Powder
  • 2 tsp Garlic Powder
  • 2 tsp Pink/Himalayan/Rock Salt
  • Coconut Oil, Ghee, or Full Fat Butter (to grease your slow cooker)

For the Beef Brisket Honey BBQ Sauce

  • 1/2 Cup Ketchup
  • 1/2 Cup Molasses
  • 1/3 Cup Apple Cider Vinegar
  • 4 Tbsp Honey
  • 2 Tbsp Brown Sugar
  • 2 Tbsp Worcestershire Sauce
  • 2 Tbsp Cold Water combined with 1 Tbsp Cornstarch
  • 2 tsp Dijon Mustard
  • 1 tsp Garlic Powder

Directions:

  1. Grab one of the healthy saturated fats mentioned above and grease your slow cooker.
  2. Take a small bowl, throw all the ingredients (EXCEPT for the cornstarch and cold water) for the beef brisket honey BBQ sauce in there, and whisk them together – set it aside for now.
  3. Take all the seasonings for the beef brisket and stir them together.
    1. Now grab your briskey and thoroughly give it a good rub down like it’s a sexy massage on your honeymoon night with said seasonings, then put your brisket in the slow cooker.
  4. Grab that honey BBQ sauce I told you to set aside and pour it over your brisket in the slow cooker, cooking on low for 10 hours.
  5. When the time’s passed, take the liquid from your slow cooker and pour it into a large saucepan over medium to high heat, and bring it to a boil.
  6. Take a small saucer and mix your cornstarch with some cold water until it’s thoroughly mixed and dissolved, then go ahead and pour that into the same large saucepan, but knock back the heat to medium to low, stirring until your honey BBQ sauce has thickened, then remove it from the heat pronto.
  7. Take a fork or three and shred your beef brisket in the slow cooker, pouring your now thickened sauce into said slow cooker.
  8. Stir everything together.
  9. Fight back your friends, family, and woodland creatures who want some until it reaches the dinner table.
  10. Pair it with some recommended nutrient dense vegetables and carbs as found in SUPP UP. No Bull, Whole Food Military Nutrition At Home for a healthy, hearty meal.
  11. Try not to eat it all, sharing with your family/friends instead.
