Clean Snacking: EASY High Protein Brownies

If you’ve been reading the SUPP UP. blog long enough, you’ll know that I don’t try and discourage you from eating the things you love – I simply state that everything is best in moderation.

I like high protein. I like brownies. I love high protein brownies. Why? Because why not – it’s killing two birds with one stone, function and flavor.

Let’s get started.

You’re looking at 122 grams of protein per batch of brownies.

Will there be sugar in this? Yes – I don’t believe in chemical sweeteners, and if you’ve read either of the SUPP UP. nutrition guides you’ll know that glucose is a necessary (and sole) food for the brain; it also make sure your glycogen stores are topped up in your muscles, so let’s stop with the vilifying of it. Here’s the recipe.

Easy High Protein Brownies

Makes: 9 Brownies, depending on how you cut them.

Prep Time: 5 minutes.

Bake Time: 20-30 minutes depending on your own and how gooey/dry you like them.

Total Time: 25-35 minutes.

Items Needed:

  • Mixing Bowl
  • Whisk
  • Spatula
  • Sift (aka sieve) (optional, but makes the mix smoother)
  • Scale (with metric measurements)
  • Measuring cups
  • A 9″x9″ baking dish (23cm x 23cm)

Ingredients:

  • Wet:
    • 170 grams Greek Yogurt (Fage Total works best)
    • 4 medium eggs
    • 60 ml melted coconut oil
  • Dry:
    • 300 grams caster sugar
    • 70 grams self-raising flour OR regular flour w/ 1tsp baking powder
    • 60 grams whey protein concentrate (chocolate)
    • 50 grams cocoa powder
    • Salt to taste
  • Toppings:
    • 20 grams rough chopped white chocolate – you’ll mix these in.
    • 10 grams chopped dark and/or milk chocolate – you’ll put these on top at the end.

Directions:

  1. Preheat your oven to 180 C / 350 F.
  2. Mix all your wet ingredients in a bowl.
  3. Sift and mix all your dry ingredients in another bowl.
  4. Add your wet ingredients to your dry and whisk them together.
  5. Add in your chopped white chocolate, folding it into the mixture with a spatula.
  6. Line your baking dish with some non-stick baking paper, and pour in the mix evenly.
  7. Top with chopped milk/dark chocolate mix.
  8. Bake for 20-30 minutes depending on how gooey/dry you like your brownies.
  9. Take out, let them cool for about 10-15 minutes, and enjoy.
